Profile: Lee works very closely with Bonville’s consulting Chef George Francisco as they are in constant communication discussing upcoming events & discussing new dishes & techniques. Lee also travels to Jonah’s in Sydney regularly to share knowledge with the Jonah’s team & to bring back recipes & techniques to the Coffs Coast.

Lee’s passion for fresh, quality local Coffs Coast produce is second to none & is evident in his perfect Bonville dinner - “You can’t go past the Woolgoolga Lobster as entrée, its simply the best Lobster I’ve worked with from anywhere in Australia with a flavour one definitely remembers, then the Eye Fillet of Beef, sourced from none other than Russell Crowe’s farm and is grain fed for 150 days then prepared to your liking. To finish off it’s the Napoleon brûlée with caramelised pineapple and passionfruit, of course shared with friends.
